Our cultures for your culture Culture design is the most important aspect of developing a new starter culture or pre-serving a traditional one. Consistent production and quality products begin with a dependable culture. That’s why we strive to produce the best cultures with the highest performance and balance of your application. We provide a diverse line of cultures with the versatility to adapt to your processes. 1. Traditional – For reliability and fine flavor production. Our traditional cultures have the natural balance and strain compatibility that was established in their original form. These traditional cultures have proven their long-term use even in today’s fast-paced production environments. 2. Modified – For enhanced flavor, acidity development, or viscosity producing ability. Vivolac modifies traditional cultures by combining them with newly identified single function strains. This provides improved flavor and body with the advantages of faster fermentation times. These modified cultures compose the majority of our culture line. They are durable under a wide range of processing conditions and formulation changes 3. Custom – For unique cultures to fit extreme processing or formulation changes.
We can
develop completely new, custom cultures. We have developed innovative
cultures to: meet new time constraints, enhance body in minimally stabilized
products, reduce bitterness over the shelf-life of cheese, maximize flavor
and body in low- and non-fat products, or minimize yogurt culture acidity
for more flavor perception. We start from scratch, survey our extensive
collection of strains collected throughout the world and history, and
compose several prototypes for field trial. |
